For Paneer Balls:
- 1 liter full cream milk
- 2 tbsp lemon juice or vinegar
For Sugar Syrup:
- 1 cup sugar
- 3 cups water
For Rabri ingredients 🙂
- 500 ml milk
- ½ tsp cardamom powder
- Few saffron strands
- Chopped almonds & pistachios

- Boil full cream milk and add lemon juice slowly to curdle it.
- Strain the paneer and wash with cold water to remove sour taste.
- Knead paneer until soft and smooth, then make small flat balls.
- Boil sugar and water to prepare sugar syrup.
- Add paneer balls and cook for 10–12 minutes until spongy.
- In another pan, boil milk to make thick rabri. Add saffron and cardamom.
- Squeeze sugar syrup from paneer balls and add them to warm rabri.
- Let rasmalai soak for at least 2 hours. Serve chilled.
